At Beauregard’s, the meat case reflects how we work. Every cut comes from farms we know and trust, many right here in Florida, and everything is broken down in-house by Chef Cameron Falls and his team.
We practice whole-animal butchery, using the entire animal and paying attention to the details that matter. You’ll find familiar cuts alongside ones you don’t always see, depending on what’s coming through the shop.

At Beauregard’s, we work directly with ranchers and producers who raise their animals with care, intention, and respect for the land. This means no hormones or antibiotics are given to their animals and they are finished ethically and in a low stress environment.
These are the folks behind the flavors – small farms and regional producers who believe in doing things the right way. Here’s where your meat comes from:

At the heart of our pork program is Heidi from Herta Berk Schwein. She’s the real deal—raising heritage-breed hogs on pasture with care, intention, and hands-on know-how from birth to harvest. Every two weeks, she delivers whole hogs to the shop just days after slaughter, giving us a level of freshness and traceability that’s nearly impossible to find. From porchetta to pâté, sausage to shoulder roasts, her pork is the foundation of some of our most-loved housemade items. You won’t find better pork in Florida.

Marcinek Farms raises full-blood Japanese Wagyu cattle in North Florida, a small herd managed slowly and carefully on open pasture. The cattle are finished on natural feed and handled with a level of attention that allows the genetics to fully develop. This program results in the intricate marbling Wagyu is known for.
The result is beef with a silky texture and deep, buttery richness that melts as it cooks. From steaks to house-ground Wagyu, it’s the most indulgent beef in our case. If you’ve had our chopped cheese sandwich, you’ve already tasted Marcinek’s Wagyu.

Providence Cattle raises 100% grass-fed, grass-finished Angus right here in Florida, without antibiotics or growth hormones. What sets them apart is the time and care they’ve put into dialing in a grass-fed program that develops real depth of flavor, not just lean beef.
Through thoughtful grazing, genetics, and finishing, they’ve created grass-fed beef with a cleaner bite, better balance, and more nuance than most people expect. It’s a program built patiently and deliberately, and it shows up in the flavor.

We call this the steak with a story and one of Florida's best kept secret. Florida Cracker Cattle, raised on palmetto, wiregrass, and wild forage for 3-7 years! The beef is lean, clean, and rich with flavor.
You’ll be hard-pressed to find it anywhere else. The breed is naturally smaller and slow growing, so most producers skip it for quicker, heavier cattle. Cracker Cattle is rated as one of the world's best steak. We're proud to have this unique relationship with Bryan and his ranch!

We’ve been working with Quincey for a long time. They raise Angus cattle the right way - pasture-raised, grass-fed and grain-finished for that deep, clean flavor with just the right amount of fat. You’ll taste it in every ribeye, strip, and skirt steak we break down from their beef.

Not Florida, but too good to leave out. Chatel's beef is consistent, well-finished, and breaks down beautifully. If you're grabbing our house-ground blend, you're tasting the best of Chatel - tenderloin, brisket, and ribeye trimmings ground fresh.

Our source for organic, air-chilled poultry. La Belle’s chickens and ducks are raised on small family farms with incredible attention to quality and consistency. We carry their birds for the flavor alone. Limited runs.

Brasstown Beef comes from a small, family-run farm in North Carolina with limited regional production. The cattle are pasture-raised on open land with grass and grain access, producing beef that’s balanced, consistent, and well-finished.
Harvested at a much smaller scale than industrial beef, Brasstown is known for its steady quality and dependable structure. It’s the kind of beef chefs rely on as a house steak, and we’re glad to have it in our case alongside our other trusted beef programs.

Creekstone Farms works with a network of top-tier Angus producers, selecting cattle from the top tier of Black Angus genetics for marbling and flavor. The cattle are pasture raised and finished on grain in Kansas, raised without antibiotics or added hormones, with full traceability from birth to harvest.
Their program is known for consistency and deep, steakhouse-style richness. The result is beautifully marbled beef that cooks evenly and delivers the kind of flavor people expect from classic prime steakhouse cuts.

It’s a good question and one we get often – we wish the answer were simpler.
Florida has very few USDA-inspected poultry processors, which makes it nearly impossible for small farms to raise and sell birds at the scale and quality we need. Strict regulations, a lack of infrastructure, and high predator and disease pressure mean even the best local farms focus on beef and pork instead.
Our mission is to source the best quality product for our customers, even if it means we have to look a bit further. That’s why we bring in air-chilled, organic poultry from La Belle Farm in New York – a family-run farm that raises birds the right way, with care and consistency we can stand by.

Yes! We offer quarter and half steer shares. All shares are expertly hand-cut in-house by our butcher team and packed with a mix of steaks, roasts, and ground and all vacuum sealed and freezer ready. Inquire to learn more.
